Russian Vegetable Dishes: Stuffed Eggplants
Stuffed Eggplants
You will need:
Pork - 500g;
Eggplant - 4;
Tomatoes - 3;
Onions - 1;
Finely chopped parsley - 100 g;
Salt - to taste,
Freshly ground black pepper - 1/4 tsp,
Vegetable oil - 2-3 Tbsp;
Cheese - 8 slices (optional).
Preparation: Cut eggplants lengthwise, sprinkle with salt and set aside for 10-20 minutes.
Lightly fry eggplants in vegetable oil.
Chop onion and fry in oil until golden brown.
Mince meat , add fried onion, chopped parsley, diced eggplant pulp, salt, pepper and mix well.
Fill eggplants with a mixture, put tomato slices on the top and place them on a baking sheet.
Pour a little water on a baking sheet and cook eggplants in a well-heated oven for about 30-40 minutes.
Just before eggplants are ready put slice of cheese on each half of eggplant if desired.
When Stuffed Eggplants are ready put them on a plate and sprinkle with fresh herbs.
