Chicken and rice is one of the favourite foods of Russian people including my family. It's so delicious and also easy to cook!
You will need:
1 Lb chicken fillet /better breast/;
1 cup long grain rice;
1 big carrot;
1 medium size onion;
1-2 garlic clove;
1 medium size sweet pepper;
Spices, salt and pepper to taste.
Preparation:
Cut chicken fillet in a small chunks. Sprinkle chicken with salt, black pepper, oregano, basil. You can add to this list other spices you like. Put cooking oil /I use peanut oil, but you might use different kind/ in a big frying pan and fry chicken till it slightly golden brown.
Cook prewashed rice in a medium size pot, adding two cups of cold water. When the water start boiling, turn the heat down to the lowest, add half teaspoon of salt and cover pot with the lid. When all water will evaporate, turn off the heat.
Then grate carrot, chop onion and garlic, сut into small pieces sweet pepper. Add all to the chicken. Then cover everything with the rice.
Sprinkle rice with salt, pepper and spices. Cover chicken and rice with the lid and let it cook for 10-15 minutes on medium heat stirring occasionally.
Decorate chicken and rice with parsley.
