For Russian Vegetable Soup you will need:
2 carrots;
2 turnips;
1 small zucchini;
1 leek or onion;
1 potato;
1 selery stick;
1 garlic clove;
20 g
butter;
Salt and pepper to taste;
1 litre of water;
2 sprigs of parsley.
Preparation:
Peel and wash all the vegetables, slice them.
Melt the butter in a saucepan, add the vegetables.
Cook for 4 - 5 minutes on a low heat, stirring constantly.
Add salt and pepper, pour in 1 litre of hot water. Bring to boil and simmer for 25 minutes.
Add spoon of fresh cream and chopped parsley on the top of Vegetable Soup before serving.
