Kissel is one of the popular sweet drinks in Russia that made with berries, more often with Cranberries.
You will need:
Cranberries - 100g;
Sugar - 4 Tb;
Potato (corn) starch - 1 Tb;
Water - 3 cups.
Preparation:
Wash cranberries and place them in a non-oxidizing pan. Mash cranberries and put them in cheesecloth. Squeeze the juice (in a glass bowl or non-oxidizing pan) and set aside in a cool place.
Pomace from cranberries put into the pan, cover with 2 cups hot water, bring to boil and simmer for 4 - 6 minutes.Strain through cheesecloth, then add sugar and mix well. Heat to boil , constantly removing the foam from surface.
Put starch into a separate bowl, add 1 cup cold water and mix well. Pour starch in cranberry syrup, stirring constantly with a wooden spoon and quickly bring to boil. Add cranberry juice, mix and turn off the heat.
Serve Kissel when it's chilled.
