Russian Desserts: Pumpkin Oladi

Oladi are very similar to pancakes, but thicker and and smaller. In Russia they make different kinds of oladi. Here is the recipe of tasty and hearty Pumpkin oladi.

 You will need:

500 g flour;
500 g pumpkin (grated);
 2  eggs;
 1 Tb sugar;
1 ts salt;
1/2 ts baking powder;
 2 Tb vegetable oil.



  Preparation: 

In a large bowl combine grated pumpkin, eggs, salt, sugar, flour and baking powder. Mix thoroughly the batter.

Pour a little of vegetable oil on a preheated frying pan and fry Pumpkin oladi  until light golden from both sides.

Serve oladi while its warm with honey, jam or sour cream.
