Russian Pastry: Kulich

  We ussually make Kulich for Easter in Russia.

  Kulich recipe

  You will need:
1 c milk ,
1/2 yeast stick,
200 g sugar,
200 g butter,
3  eggs,
1/2 ts vanilin,
 cardamom ,
 nutmeg ,
 salt to taste,
1 cup white raisins ,
 4-5 cups flour.

   Preparation: 
  Dissolve yeast and 1 teaspoon sugar in a small quantity of milk lightly warm. As soon as the yeast mixture rises, pour in the rest of milk, beat in eggs and whip carefully.
   Add sugar, combined with cardamom and nutmeg, and melted butter to the mixture. Then pour in flour slowly, stirring constantly, so that there aren't lumps. Then stir in raisins.
   Divide dough in  cakes, depending on the size of baking forms, put in forms. Cover with a clean towel and leave to rise in a warm place for 2-3 hours.
Then put  cakes in a preheated oven and bake at 350F until light brown. Don't open the oven often and better not to open at all the first half hour; otherwise Kulich won't be  fluffy.
   Check the readiness with a wooden stick. If the stick is clean, Kulich is ready. Sprinkle Kulich with powdered sugar and chopped nuts on the top.
