Russian Desserts: Blini Cake with Mushrooms
Blini Cake with Mushrooms Recipe
You will need:
Filling:
Chopped onions - 200 g; Chopped green onions - 2 Tbsp; Butter - 3 Tbsp; Mushrooms - 500 g; Salt - 1/2 tsp; Pepper - 1/4 tsp; Flour - 1 tsp; Milk - 110 ml; Mozzarella cheese (grated) - 100 g; Parmesan cheese ( grated) - 60 g.
Pancakes:
Eggs - 2; Milk - 3/4 cup; Water - 1/2 cup; Flour - 1 cup; Butter - 3 Tbsp; Salt - 1/2 tsp. Vegetable oil - 1-2 Tbsp.
Preparation:
Pancakes:
Mix all ingredients. Grease frying pan with oil and bake thin pancakes. Let them cool off.
Filling:
Melt 1 Tbsp butter in a large frying pan. Fry onions and green onions till it starts giving juice, but do not overcook. Low heat to medium and add
mushrooms with 2 Tbsp of remaining butter. Season with salt and pepper and cook until mushrooms are soft.
Then add flour, stir and pour in the milk. Remove half of the liquid from the pan. Add grated cheese and let it melt.
Put filling on each pancake. Sprinkle Blini Cake with Mushrooms with grated cheese on the top.
