Russian Vegetable Okroshka

 You will need:
2 medium boiled  potatoes
1 medium carrot 
1 turnip
3-4 red radishes
1 cucumber
3 boiled  eggs
Green onion springs
Sour cream
1  kvas bottle
dill for decoration
salt&sugar to taste.


  Okroshka is Russian summer vegetable soup, but can also be made with sausages or meat. It is very refreshing in hot sunny days, served right from the fridge.
  First, cut potatoes into cubes. Cut carrot and turnip in cubes and stew in the pan with a little water until they are soft. Cut radish and cucumbers in cubes, chop eggs and green onion springs. Put all  in a bowl. Add salt and sugar, dress with kvas. Serve with chopped dill and sour cream.
